I think it's not really a problem that Denthors tutorials are Borland
oriented.
All you have to know is how you have to access the ports
(inport,outport) and
the VGA RAM (for example with _farpoke or _movedata) in DJGPP.

However, I personally don't love those tutorials very much.
The techniques in those tuts aren't very advanced (The tutorials are
quite old).
If you want to impress ppl nowadays, you need to know much more.
