I suppose this is because vulnerabilities of unpatched Windows and *nix are so widely known. Tools exist that allow you to root such machines without any L337 h4X0R skills at all.
In contrast to Mac servers which are, as mace already pointed out, pretty rare. There are probably few programmers bothering to write flashy tools for breaking into Mac servers.
