Aebleskiver

Okay, I don't know if MrCrash is around, or if he has eaten aebleskiver, but anyone who has...and has some favorite recipes would recieve my unmitigated joy if they would post them.

I found one that seems remotely like what my mom used to make when she was alive, and I am hot on the trail of recreating it. Here's the one I found:

Aebleskiver

3 egg yolks
1 cup buttermilk
1 tsp soda
1 1/2 cups flour
1 tablespoon sugar
1/2 tsp salt
3 Tbsp butter
3 egg whites
Diced apples, raisins and chopped nuts (optional)

Mix egg yolk mixture seperately from the dry ingredients, then blend them together. Whip egg whites and fold into the mixture. Add apples, raisins or nuts, if desired. Heat the pan on range top, put about 1 tablespoon of batter into each cup. Turn with a metal knitting needle or fork when the batter is brown on the bottom (almost right away). Turn with the knitting needle and keep turning until the needle comes out clean after piercing through the cake. Sprinkle with powdered sugar, or dip in raspberry jam, apple butter, or honey, or even syrup. Eat like a doughnut.

For those that don't know, aebleskiver look like large doughnut holes, and you eat them with your fingers, traditionally. They are made in a round pan with six concave circles in them to accomodate the batter.

If anyone has any additions I'd love to see them.
