FM4 featuring some cooking receipts

Just found this when I was crawling the FM4 radio homepage. It's basically some more or less interesting cooking receipts which sadly are all in German, but we (the German speaking NAOis) could probably translate some of them. The most interesting thing about them is: they're massivly picturized! Only based on the cooking receipt you probably could fiddle out whats to do by yourself only by looking on the pictures. :)

ps: right now I'm going to have some quick look at my very basic caserole (potatoes, noodles plus some bolognese sauce freshed up with some garlic) to see if its already ready. :D

Consisting Mainly Of Appels

There are many cooking receipts for chutneys and you can make one out of pumpkins as also out of peaches or tomatoes (= Paradeiser).
There is no stop, both vegetables as well as fruit has to be used to produce some kind of piquant jam and/or mash. You can eat it to grilled meat - generally to quickly roasted meat - but also to fish and vegetables - warm or cold. It is quasi multi-passportable.

"Sounds all very g'schmackig", thinks Gerlinde and I, thus we take care of the Chutney mission! We do it like Milkman and plan a bang-yellow apple Chutney.

Let's make an Apple-Chutney!

In our cooking recipe, we assume you've got half a kg of apples. In addition one can take either the cheapest ones in the 1 kg bag, do the classic approve and use some of the golden Delicious ones or make a mixture from different sorts. You should take juicy apples with a good taste, but if they're a bit sourly, then that wouldnt be a harm done at all!

Further we need in each case a half up to a whole tea spoon of cinnamon, turmeric, cumin and maximally half a tea spoon of seeds of fennel, which in this case actually IS needed. A dried chili pod/husk, as well as some cane sugar and lemon juice are also belonging to this recipe.

Wafer, pins, dices

It's easily done and actually quite fast:
The apples get peeled, quartered, remove the core and cut em into small dice-like cubes.

Heat up the pot (dry - without oil) and add the spices, which by then have been cut up and mixed in the mortar. Roast them a bit, but dont let them burn! After some short period of time, add the apple pieces and mix them, so that each bit of the apples get in contact with the spices; pour in some splashes of water - and put the lid on!

There are chutney receipts with fruit, which is mashed first. Thus you of course can let the apples coo until they are very soft and disintegrated. It is really a matter of taste, in which condition the cubes at the end are to be, also how much liquid thereby has to be. For our bite-firm variant you need little water and 10 minutes of covered, light cooking.

And suddenly Gerlinde says: "That smells like fennel tea..."

Finally add approximately two tablespoons of cane sugar and a bit of lemon juice to taste, stir it up and done!

You can put the chutney into the fridge and it'll be fit to eat for at least the next two weeks, if it is kept inside of clean jars. Cooled it doesnt only taste good with grilled stuff - but test it out yourself! You also can experiment with the quantity of the spices: Those of you who discover a spice mixture named "Panch Foron" at the Naschmarkt or in a grandios-dubious shop, should acquire this one immediately and completely replace our spice list thereby (be careful with the quantity!). It tastes very very well, honestly!

Thank you for the early birthday present! Thank you! This sounds delicious...mmm. So, I don't understand why you haven't received my mailing address...I sent it more than three days ago, but I'll send it again.

Anyway, I shouldn't be here tonight, but I am off work due to many reasons, one of them being that one of my back fillings fell out while eating mashed potatoes. I have gold for my birthday! All jokes aside, I'm not terribly happy about this...going to call the dentist in the morn, and after that is all said and done, then maybe I shall set about mixing up some chutney, with a little smidge of roasted habanero.

My mind is made up...not like my bed, which is a mess.

So, I don't understand why you haven't received my mailing address...I sent it more than three days ago, but I'll send it again.

Update: I've found it. It just went in the wrong folder (some stuff gets automatically sorted via my directBOX.com account). ;)
What's bad about this: according to Deutsche Post AG, a simple small parcel via air mail would cost 25,- EUR (for just 1 kg of chocolade). How long that'll take to reach you, I really dont know. And if I'd send it via some other delivery services, eg. FedEx or UPS, the costs would rise into oblivion. :-/

After I'm done with my current job, I can think about sending you this parcel once again, cause then I a) will have more time and b) more money :D

I'm not terribly happy about this...going to call the dentist in the morn, and after that is all said and done,

I wasnt happy yesterday, too. What's still hurting are the stitches still left from the 4-5 injections of painkillers I got. But better be on the safe side and feel no pain while the doc is slaughtering his way throu' your mouth than feel 'sorry'. ;)

BTW: Next slaughter'll be end of this week, on Friday.
