Okay...I was playing around in the kitchen, since I went back to work Monday, and got floored again. I have to cook for myself, there is no one else here, and I was sick of frozen food, so I looked in the fridge at the veggies and such. I found two bags of fingerling potatoes that I had bought at a reasonable price, but were now starting to develop a few eyes, because I have been so busy. I found a couple of heads of garlic...so here we go....
Russian Banana Fingerling Mashed Potatoes with Braised Garlic
4-6 servings
ingredients:
3 pds. Russian Banana fingerling potatoes (or other potatoes good for mashing); 6 Tbsp. butter; 1 Tbsp. ghee (optional for flavor); 2 c. BROWN COW yoghurt (absolutely nothing else will do, except whole milk or cream...BROWN COW tastes like sour cream, not like sour yoghurt); 1-2 garlic heads, with individual cloves peeled; 1/2 c. vegetable stock (or water and salt if you have nothing else); 2 Tbsp. butter (yes...again!); pinch nutmeg, salt and pepper
PREP:
1) Boil the potatoes until just tender and not too mushy. Drain and mash. Set aside.
2) BRAISED GARLIC:
Heat 2 Tbsps. of butter in a saucepan. Saute the garlic cloves for 2 min. without coloring them. Add stock, cover, simmer for 20-30 min. until tender but the garlic still holds its shape.
3) Beat the butter, ghee, and yoghurt into mashed potatoes. Add braised garlic and the braising liquid, thinned with water, to remove the 'drippings' from the pan. It will add a toastier flavor, without the heat of garlic raw. (Alternately, dilute the coating on the pan with water and save for stock next time.)
4) Mash garlic and braising liquid into potatoes.
5) Taste. Add a pinch of nutmeg. Add salt and pepper to taste. Mash once more.
May be sprinkled with nutmeg for decoration, and a slight bitter taste, which I love. :D
Btw, leave the skins on the fingerlings. It takes too darn long to peel, and quite a bit of your nutrients, including the Vit. C in the potatoes disappears when you peel them. You need the roughage too...if you're American. Heh.
Additionally, if you are a huge Blue Cheese fan (which I am not), you could add a smidge of Blue Cheese to these mashers. Some people like it, as in some other people who have their 'own' versions of Garlic Mashers. Happy Cooking!

Which Americans aren't including enough fiber in their diets?
You wanna' know what gets me to eating properly, color photos of diverticulitis.
I try my best to eat at least two apples a day, a pear or peach, and another fruit group. This doesn't include delicioius vegetables such as okra.
By the way, the receipe didn't include bananas as the title suggested.
