Always follow your heart. In 20 years, your ability to look in the mirror and be content with yourself will be directly proportional to the amount of times that you did what you think is right.
Your boyfriend is black. So what? He can't change his skin colour... and why should he? It's not like people with one skin colour are 'better' than those with another skin colour.
Your boyfriend is a muslim. So what? He's your boyfriend, that probably means he loves you, a jew, and that in turn means that he's open-minded. If he were calling you an 'infidel whore' and trying to bomb you, then you would have a problem. But he's not.
The decision is yours alone, and all I'm giving you here is my own opinion. But if your mom really loves you, she'll want you to be happy... and that means if your boyfriend makes you happy, she should accept him. That may not be easy for her; mothers tend to force their children to do what they think makes their children happy, instead of what their children really want. They don't mean any harm, they're just being overprotective sometimes.
So your boyfriend doesn't share your family's ideals. Big deal. I bet your family doesn't share his family's ideals either. That's okay. The trick is to accept and tolerate each other. Also remember, you say shalom, he probably says salam, that's not worlds apart after all.
Whatever you do, good luck.
